I pour a splash of unsweet southern iced tea into a mug and warm it until the chill is off. Then I stir peach honey into that splash until it disappears, because if I dump it into ice-cold tea it sits on the bottom. The mix goes back into the pitcher. I use Luzianne when I’ve brewed a pot and chilled it, or a fridge jug when I haven’t. Ice stays in the glasses so the batch doesn’t water down.
Most days I drink it at the kitchen counter after I’ve been out in the heat. If I mixed the pitcher before supper, it stays on the table through the meal. On slow afternoons I take a glass to the back steps and sit out there in the shade.
Ingredients
- 4 cups unsweetened iced tea, cold (Luzianne brewed and chilled, or Uncle Matt’s, Tejava, The Southern Standard, or Milo’s)
- 3 tablespoons Infused Honey — Peach
- Ice
Putting it together
- Pour the tea into a pitcher.
- Spoon the peach honey into a small cup with 2 tablespoons of tea. If the tea is ice-cold, warm that splash first so the honey loosens. Stir until you cannot see it on the spoon.
- Stir that into the pitcher. Taste. Add another teaspoon of honey if you want it peachier.
- Fill two glasses with ice and pour.
Tips
Honey sits in a lump at the bottom of ice-cold tea. Dissolve it in a little warm tea before it hits the pitcher. Unsweet is the point. If the jug is already sweet, the peach has nowhere to go and the glass tastes like candy.
