What does “raw” mean here?
Raw honey is the staple sweet nectar, bottled in Greenville. After harvest we separate it by weight: Light Amber is floral and fine, Dark Amber is deep and malty. It is better than sugar (in our opinion).
What is a cold infusion?
Cold infusions use natural enzymes already in the honey, mixed with fresh fruits and warm spices to enrich the tasting notes with bold custom flavors. Turmeric, ginger, peach, cinnamon, and lavender rest in the jar for months. Check out our selection.
What is the difference between raw and infused?
Raw honey is just the honey, separated by weight after harvest. Cold infusions take months of development: whole turmeric, ginger, peach, cinnamon, and lavender rest in that honey so the natural enzymatic process can extract their flavors.
It went solid. Is it spoiled?
No. Glucose in raw honey comes out of solution as crystals. That is natural, not spoilage. Leave the lid on, set the jar in warm (not boiling) water, wait until the edges loosen, stir from the bottom, and repeat with fresh warm water until it runs.
How should I keep it?
Lid tight, cool, dry, out of the sun. A cupboard is better than a windowsill, because heat and light hurry crystallization and dull the tasting notes.

Can infants have honey?
No. Do not feed honey to children younger than 12 months.
